Disable Automatic login (System Preferences > Accounts > Login Items)
Delete any other accounts that may be on the machine. (System Preferences > Accounts)

Purchase a piece of software called Little Snitch which will stop any outgoing traffic that you do not sanction.

I saw a server name on one of the screens, can't remember which screen it was.

It's listed under recent items, the server name is the name of the person I allowed to use my computer. When i clicked on it, it took me to an idisk folder. I know for certain now that they're accessing my computer, they told on themselves by commenting on information that was in my personal email.

If the person has a Mobile.me account, then that will be the iDisk server that you saw in recent items.
It is possible that they have turned on "Back to my Mac"
go to System preferences > MobileMe and turn OFF "Back to my Mac"
Read my first post again and do all the things listed, except removing the ethernet cable, and you should be OK.
Never, ever, allow someone to use your computer unsupervised. This person should NEVER be allow to be in the same room as your computer without you being there.
You can create a limited account (Non-Admin) that you can allow others to use and that will not allow them to install or configure anything.

I've done all that you've suggested. I guess i don't understand how they were able to access my computer remotely without knowing my password.

What makes you think that the person does not know your password?
If the person put their mobile.me account name and password into the Mobile.me preference pane, then that person would not need to know your password to access the machine via Back to my Mac.
Remember that when you gave that person Admin access, your account, to your computer, they could have read ALL your email without having to access it remotely

I actually didn't answer your questions in my last response. I'm not sure if they didn't know my password, I just know that I hadn't given it to them. I wouldn't be surprised if they didn't have that hacking software that allows you to see a persons keystrokes

Now hopefully they won't be returning to my mac. I've learned my lesson. Had they not told on themselves, I never would've known they were accessing my computer. They've also had access my ipad, should I be concerned there? I really appreciate your help in this.
